Pasta E Fagioli

Ingredients

  • 1 tablespoon olive oil⁠
  • 1/2 cup yellow onion⁠
  • 1 clove fresh garlic⁠
  • 1/4 cup fresh parsley⁠
  • 2 cans cannellini beans⁠
  • 1 cup marinara sauce⁠
  • 32 ounces vegetable broth⁠
  • 1/4 teaspoon black pepper⁠
  • 1/4 teaspoon red pepper flakes⁠
  • 2 cups ditalini pasta⁠

Preparation

  1. Heat the olive oil in a large soup pot over medium heat and add the onion, garlic, parsley, black pepper, and red pepper

  2. Saute until soft and fragrant

  3. Add the vegetable broth, tomato sauce, and cannellini beans

  4. Simmer for about 15 minutes so the flavors meld together
