Vegan ‘Ham’ N Cheeze Stuffed Broccoli Waffles

Ingredients

  • 1/2 head broccoli
  • 2/3 cup flour (i used chickpea flour)
  • 2/3 cup vegan unsweetened milk
  • 1 tbsp nutritional yeast
  • pinch of smoked paprika
  • pinch of garlic powder
  • 1/2 tsp baking powder

Preparation

  1. Chop and boil the broccoli until v soft (~7 mins)

  2. Drain the broccoli and mash it with a potato masher

  3. Whisk together all the ingredients to form a smooth batter

  4. Preheat your waffle iron

  5. Pour in some batter to fit the waffle iron shape

  6. Close the iron and start cooking the waffles

  7. Half way, open up the waffle iron and (hopefully) the waffle should break in half (sticking to both sides) and place on a ✨ slice of vegan cheese (or some grated) and ✨some vegan ham (scroll to see pics) - or just cut the waffle in half if it sticks together

  8. Place the waffle iron down again and continue cooking until golden

  9. Repeat with remaining batter and serve with whatever you want
