Smokey Mac N Cheese

Ingredients

  • 1/2 block grated @violifeamerica mature cheddar
  • 3/4 block grated @violifeamerica smokey provolone
  • 1 tsp of cayenne powder
  • 2 tbsp of nutritional yeast
  • 1 tsp of garlic powder
  • 1/2 tsp of turmeric
  • 1 tsp of smoked paprika
  • 1 tbsp of cornstarch
  • pinch of ground nutmeg
  • 2 - 21/2 cups of water
  • 1 cup of unsweetened cashew milk
  • 2/3 cup of raw cashews soaked (with water)
  • salt & pepper
  • 1 tsp of liquid smoke
  • braggs amino acids
  • favorite macaroni or short pasta
  • optional topping:
  • traditional breadcrumbs

Preparation

  1. Soak cashews in hot water for 30 minutes or longer and then blend them with a cup of water in a high speed blender

  2. Add all the spices including cornstarch and slowly add grated cheese to the blender and blend

  3. Add milk and more water as needed until all the cheese has been incorporated into a smooth and velvety sauce

  4. Pour over cooked pasta in baking dish and top with bread crumb mixture before baking

  5. Bake uncovered at 350 for 35 minutes
