Dreamy Cashew Cheese Dip

Ingredients

  • 1 cup cashews, soaked in filtered water for 4 hours or overnight, drained and rinsed
  • 2 tbsp nutritional yeast
  • 2 tbsp fresh lemon juice
  • 1 garlic clove, crushed (1 large clove if you love garlic)
  • ½ tsp sea salt, add more to taste
  • ¼ tsp freshly ground black pepper
  • ¼ cup filtered water – more if needed
  • 1 loosely packed tbsp chives or dill (optional)

Preparation

  1. Place the cashews, nutritional yeast, lemon juice, garlic, salt and pepper in a food processor.

  2. Pulse to break down the cashews until they form a coarse but wet consistency.

  3. Scrape the sides down into the processor and turn on consistent setting.

  4. While blending, add the water and continue to process for about 1-2 minutes.

  5. The consistency should be similar to hummus, so you may need to add a little dash more water.

  6. Add lemon, salt and pepper to taste, and fresh cut herbs.
