Spiced Veggie Lentil Stew

Ingredients

  • 1 cup dry red lentils, rinsed well
  • 1 green bell pepper, diced
  • 1/2 cup sliced mushrooms
  • 1/2 small red onion, diced
  • 1/4 cup sundried tomatoes, roughly chopped
  • 2 tsp smoked paprika
  • 1/2 tsp ground ginger
  • 1 tsp granulated garlic
  • 2 tsp dried basil
  • 1/4 tsp cinnamon spice
  • 1 bay leaf
  • 3 cup low sodium veggie broth

Preparation

  1. In a large sauce pan, add in mushrooms and onions and sauté until onions are softened

  2. Add in green bell pepper and spice mix except bay leaf

  3. Combine and sauté until fragrant

  4. Add in lentils, crushed tomatoes and dried tomatoes

  5. Stir together then add in veggie broth

  6. Bring mixture to a boil and add bay leaf

  7. Reduce to a simmer and cover

  8. Allow to cook for 20 minutes or until lentils are tender and cooked through

  9. Remove from heat and stir before serving
