Cauli-Salad

Ingredients

  • I took one bag of @traderjoes riced cauliflower and cooked it over medium-low heat in 1 tbsp of olive oil
  • Season with salt and pepper. When cooked, scrape it onto a sheet pan and put in the fridge to cool
  • Then, quarter and chop three Persian cucumbers, slice two green onions and chop 1/3 cup of parsley
  • Whisk together 2 tbsp of olive oil and 2 tbsp of lemon juice and add 1/4 tsp each of salt and pepper
  • Add the veggies and dressing to the rice in a mixing bowl. Crumble 2-3 tbsp of goat cheese over the top and toss
